Family reunion

We had a blast at "the fam reunion"! I know these words bring terror into the hearts of many. But it turns out family is fun and if put in an awesome location {Estes Park, Colorado, check it out amazing} and not just a pot-luck picnic then everyone is excited about it! Nearly 100 members came from all over including Alaska! We stayed at the YMCA (INSERT SONG HERE) and it turns out... "It really is fun to stay at the YMCA" Taylor and Sky's statement. Elk and deer were everywhere. Mini golf, volley ball, dodge ball, swimming, you name it it's there.

The girls got to bunk in the same room as 6 or their second cousins! Which was a blast for them. The Perry family Olympics was held..... the highlight was the huffy bike toss (think javelin like in track n field.) Skyler won the wheel toss by a land slide. And I (summs) won the women's division of the bike toss. We are a little disappointed that Bryson could not keep up with us!And of course let him know it!

At Rocky Mountain National Park the girls loved feeding the chipmunks! That doesn't happen everyday.

BULLieS!!!!!!

First and foremost my sky is getting bullied by a sixth grader. I am so mad, i seriously want to march to the school and bully the bully! Yes I called the school(like that does ANYTHING and I sent a MAD MOM email again not very effective.) My solution is to go to recess, pick him up by the arm, spin him around, and launch him onto the pavement (that is exactly what this 6th graders is doing to the 1st graders!) We advised her to fight back and punch or kick if he comes near her again? Ought to be an interesting after school talk.

Secondly here is my new kitchen? CONFUSED? Ya i have forever wanted ( been DREAMIN about constantly) granite counter tops and a stainless steel fridge. So when the washing machine repair man dressed in red from head to toe told me it would be $420.00 to repair my old washer I yelled HECK NO! And here ya go 2 cherry red pieces of equipment that have all ready improved my life! Ya we got the pair Bryson was sold on the 24 minute drying time. And I LOVE LOVE LOVE them. Now what color do I paint the room? Light green just ain't cutting it (CHRISTMAS!)

So behind but finally postin the WEDDING CAKES! FINALLY

Sorry yall but I have been barely keeping my head above water! And I have been meaning to share I have had a very hard time finding an extra moment so here we go.

My lil sis asked me to make her wedding CAKES of course I said yes.............then she requested a Lemon Poppy Seed Cake! Seeing how I have only made bread of that lemony type I was nervous. My other sis found a recipe online and I gave it a trial run! It was a hit and held up beautifully which is important for a wedding cake! Moist delicious and dare I say possibly better then the chocolate (GASP... I KNOW!) So here is the recipe. I did not use the filling as I simply made my butter cream frosting and mixed in fresh raspberries.

Lemon Poppy Seed Cakes with Raspberry Curd Filling
Ingredients:
For the cake:
2 1/3 cups cake flour
2 3/4 tsp. baking powder
1/4 tsp. salt
1 1/2 tbsp. poppy seeds
5 large egg whites, at room temperature
1/4 tsp. cream of tartar
1 1/2 cups sugar
2 tbsp. finely grated lemon zest
12 tbsp. unsalted butter, at room temperature
1 cup whole milk

For the raspberry curd:
8 tbsp. unsalted butter
1 pint ripe raspberries or 1 12-oz. package frozen raspberries, thawed
5 large egg yolks, lightly beaten
3/4 cup sugar
Pinch of salt
2-3 tsp. fresh lemon juice

For the lemon butter cream frosting:
16 tbsp. unsalted butter, at room temperature
2 tbsp. finely grated lemon zest
3 cups sifted confectioners’ sugar
3 tbsp. fresh lemon juice

Fresh raspberries, for garnish

Directions:
To make the cake, position a rack in the middle of the oven and preheat the oven to 350 degrees F. Butter and flour a 9×13″ cake pan. Whisk together the flour, baking powder, salt, and poppy seeds in a bowl; set aside. In the clean, dry bowl of an electric mixer fitted with the whisk attachment, beat the egg whites on medium speed until foamy. Add the cream of tartar and increase the speed to medium-high. Beat just until stiff peaks form when the whisk is lifted. Transfer the egg whites to a separate bowl, clean the mixer bowl and reattach it with the paddle attachment.

Add the butter to the mixer bowl and beat on medium speed until smooth. Gradually add the sugar and beat until incorporated. Mix in the lemon zest. Beat the mixture on medium-high speed until light and fluffy. Add 1/4 cup of the milk and beat until just blended. Reduce the speed to low and add the flour mixture alternately with the remaining milk in three batches, beginning and ending with the flour, scraping down the sides of the bowl as necessary. Beat until just blended. Using a rubber spatula, fold one quarter of the egg whites into the batter, being careful not to deflate the mixture. Once incorporated, add in the rest of the whites and gently fold in until well combined.

Pour the batter into the prepared pan and bake until golden and a toothpick inserted in the center comes out clean, about 24-26 minutes. Cool the cake in the pan on a wire rack for 10 minutes. Run a thin knife around the outside of pan and gently turn the cake out. Allow to cool completely.

To make the raspberry curd, melt the butter in a large saucepan over medium heat. Add the raspberries, egg yolks, sugar and salt, and cook, mashing the berries. Stir frequently at first and then constantly at the end, until thickened, about 10 minutes. Pour the mixture through a coarse strainer set over a bowl, pressing hard on the solids to extract as much liquid as possible. Cool to room temperature; the curd will continue to thicken as it cools. Stir in lemon juice to taste. Cover and refrigerate until ready to serve.

Cut the cake into rounds as desired. Layer the rounds with the cooled raspberry curd. Once layered, allow the assembled cakes to cool in the refrigerator to help them set. In the meantime, make the frosting. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and zest on medium speed until light and fluffy. Gradually add the sugar and beat until smooth. Add the lemon juice and beat for one minute longer.

Frost the chilled cakes with the lemon frosting. Garnish with fresh raspberries as desired.

The chocolate cake was a devils food mix! I know but I really do not even like most homemade choc cakes and I have lots of lil tricks that make it better then homemade any who! The frosting is a chocolate ganache (equal parts dark chocolate to hot heavy cream mix until well combined and cool) added to butter cream! Simply delicious. Don't forget my butter cream recipe is on my www.krazycakelady.blogspot.com

I must say I was quite happy with both cakes and unbelievably very little happened. My girls managed to stay far away from them THIS TIME thank goodness!

Leadville (the hardest MTB race in the world!)

Leadville was such an amazing experience this year. Bryson was not so much ready (to say it kindly ILL PREPARED) honestly this guy has not been on a bike so he wasn't so sure about how he would preform. He KILLED IT finishing in 7 hours and 50 minutes which is stellar due to course changes and COLD conditions ( I wore my Ski Coat ALL DAY!)16th place and LOTS AND LOTS of popped blood vessels in his eyes! Ya he pushes himself so hard he pops blood vessels? WHO DOES THAT? I'm so proud of him. I can't wait to watch him next year hopefully kill Lance on the down hills!

Side notes: Not so much important but COOL! Brandon perry came in just under 9 hours AWESOME! Ryan From the first bachelorette was there and I kind of sorta stalked him! Bryson said "You can't just stare at him" OOPS! Turns out tv does add 15 LBS. So I talked to him and tried to remain cool. Also body for life guy was there. My dad came in under 13 hours he also gave it everything he had. Im gonna do Leadville and the bummer is that I can get in automatically CAUSE Bryson is a 2 time winner and family gets an automatic entrance! Judging by the many bruises I have on my legs from my last MTB ride I've got some work ahead of me! WISH ME LUCK!!!!!!!! Better learn how to change a flat!
Bryson's finish

i scrool through hundreds of pics and this is the majority. i do want to blog real life and not some fanasty so i was wondering why do i try?

what is the point in asking the kids to smile when the goofy silly pics always turn out better. ya thats us silly and not that put together. you be the judge and maybe from here on out ill just post crazy pics instead of taking the time to find good ones.

Ya were racin

(well im riding) and bryson is desperately trying to get ready for leadville in 2 weeks. the girls love it. i love being in the mtns and supporting my bf. He is amazing and all though he may not win this year I doubt there is anyone in the world who could perform on such little racin/ridin! Maybe next year he can crash lance out for the win at the finish.

Myles is 8 months old!!!!!!!!!!!!!!!

Mymy is 8 months old (pretty sure he thought his name was buddy so im trying to call him myles more.) time is flying. i know you have heard it but i love this kid. he is cool calm and happy an amazing gift of a baby. his smile is contagious and strangers love him. ya i could do with out the touching or even worse tickle his mouth to make him giggle(swine flu), I saw the oprah where only 1 in 4 people wash their hands after using the restroom!!!!!!!!!!!!!!

he fills our home with love and im not sure how we managed without him
he loves going out especially outside my kind of guy
he bables dada, baba and makes man noise all day long (groan, gargle, scream)

Horse power

the girlies have had this motto for 3+ years now. There have been no trips to the hospital thus far. So we took off the training wheels and they are hooked.

Blessed

Yesterday I went to church after a crazy Saturday and a Sinus Infection that is winning the war over antibiotics. 9 am yep! I even had the YW pres tell me to go home(which is like a FREE PASS right?) I decided to tough it out and joined Sunday school w Bryson. As I was sitting there next to my amazing hubby and Myles sleeping in his car seat, I heard the primary kiddos singing FAMILIES CAN BE TOGETHER FOREVER. My heart was touched and I started reflecting all the infinite blessings the Lord has given me. An amazing moment. I feel so blessed to have my wonderful family. A best friend who's a great dad (to our kids) and husband to ride this ride with. And the GOSPEL as a driving force in my life.

Silly girls part deux

So as this is my journal I want to remember the 2 crazy girls that I have.So if u don't care don't read.

Preface {We went out for Thai food after a crazy busy Saturday.} As the meal was finished we were eating the Andes mints and sky said, "Livin in the lap of luxury."

Preface {the girls have a 50 moto, which has been a LG concern of mine forever they have not been able to handle it one bit. Yes there have been a few running into cars and fence incidents. So Bryson recommended we take off the training wheels!!!!!!!!!!! Turns out he was right (k first time ever) they could control it great minus the baby training wheels. long story short they are now pros and if u can believe it} Sky was chasin T and T said "You can't catch me, I HAVE HORSE POWER!"

Molten chocolate cakes

Individual molten chocolate cakes

This recipe is from Giada on everyday Italian I did alter to my liking of course. She is one of my fav chefs. I had other similar recipes but they were quite finicky and complicated. when I found this I was thrilled not to complicated and sooooooooooo melt in your mouth good. A lightly crunchy top hides the delicious pudding chocolate in the canter. I actually went through a phase where I would double or triple the recipe and then freeze in ramekins or cupcake liners (the sturdy kind in foil) and bake a delicious treat for myself when ever I pleased. The sad news is that I was at least 30 pounds lighter then, darn kids.

First butter and flour 6 six oz ramekins (or cupcake liners) and place on a cookie sheet cove rd in foil.

Slowly melt in microwave or double broiler
8 oz semi sweet chocolate
1 cup unsalted butter at room temperature

In a separate bowl add
4 lg eggs
4 egg yolks
2/3 cup sugar
beat until fluffy and pale in color. the egg mixture will double in volume
add chocolate mixture to eggs very slowly ( if added to fast youll make scrambled eggs) add 4 tbs all purpose flour gently fold in. it is ok to have streaks ther is no need to over mix.

The very most important part DO NOT OVER BAKE, if you do there goes the molten you may have just made chocolate cake. Bake at 375 for 7 minutes. This can vary due to oven so watch it closly and do not be afraid to take it out when it has formed a crust but seems a bit runny inside.

ENJOY!

Silly Girls

These are some of the things my little angels have been sayin i know i won't remember for long so RECORDING it for my personal enjoyment.

What the High school musical? ( or hannah montana, or jonas brothers) Ya they are not impressionable at all. I swear they dont watch that much tv.

Me to Sky: me "Sky did you thank Mel for the rock n roll hoodie? And did u tell her it was perfect because you had a rock n roll bday party?" Sky "No she should just read my blog." Lots of long stares. "What?" Sky.

Taylor "K where do babies really come from?" Sky "Silly they come from that little fish that swims in moms tummy REMEMBER" Lots of laughter form all parties involved and the age old question ignored for one more time. Shes only 7 she doesn't need to know yet.

Mom you are so beautiful you really do not need to wear make up. (T)

Me "Girl we are going to a bike race tonight." Taylor "YES WE ARE FINALLY GOING TO BE BUSY AGAIN!" Who knew we weren't busy I didn't.

Sky "Im gonna be so spoiled today."

GREAT NEWS

Wanna hear something awesome? We brought T in for her yearly/6 month cardiologist appointment yesterday. It may be my least favorite thing ever. Really I would prefer labor, a sinus infection or a root canal. At her last appt in September/October we were told she would need open heart surgery soon. The echo and EKG went great. Her valve is still leaking and her heart is enlarger due to overcompensating for the leaky valve (which is no surprise.) But for whatever reason her EKG was much better then last time. Which the dr could not explain (I'm thinkin test/machine error or MIRACLE. I'll just call it a miracle!) SOOOOOOOOOOOOO no surgery in the near future and we do not go in for one whole year. YIPPEE, we are jumpin for joy at our house!
